Southern Potato Salad

Southern Potato Salad Recipe

Ingredients

3 lbs of russet potatoes; peeled and cubed

4-5 hard boiled eggs, chopped

2 celery stalks, finely diced

½ small Vidalia or white onion, finely diced (about ¼ cup)

1 cup Duke’s Mayo

2-3 tbsp sweet relish

1 tsp dill weed

1 tsp Italian seasoning

¾-1tsp of garlic powder 

1-1 ½ tsp of salt (start low, adjust to taste)

½ - 1 tsp of black pepper

½ - 1tsp of smoked paprika (plus extra for garnish


Instructions

  1.  Boil the potatoes

  • Add potatoes to a pot of cold salted water.

  • Simmer 10-13 minutes until tender but not mushy

  • Drain and let fully cool.

2.  Make the dressing

In a large bowl, whisk together:

  • Duke’s mayo

  • Sweet Relish

  • Dill Weed

  • Italian Seasoning

  • Garlic powder

  • Salt & Pepper

  • Smoked Paprika

3. Add mix-ins:

Fold in:

  • Chopped eggs

  • Celery

  • Onion

4. Add potatoes

Gently fold in cooled potatoes until everything is coated.

5.  Chill

Refrigerate at least 1 hour (overnight is even better).  Dust the top with a pinch of smoked paprika before serving.
