Vegan Crabless Cake Sandwich
🌱 Vegan “Crab” Cake Sandwich (Hearts of Palm)

🥣 Ingredients
For the Vegan Crab Cakes
1 can (14 oz) hearts of palm, drained and patted dry
¼ cup finely diced bell pepper (any color)
¼ cup finely diced onion
1 tablespoon chopped capers
¾ teaspoon Old Bay seasoning
½ teaspoon Tony Chachere’s Creole seasoning
½ teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon black pepper
⅓ cup Italian breadcrumbs
3–4 tablespoons Just Egg (start with 3 tbsp; add the 4th if mixture seems dry)
For Frying
2–3 tablespoons oil (olive, canola, or avocado)
For the Sandwich (optional but recommended)
Toasted buns
Lettuce
Sliced tomato
Vegan tartar sauce or spicy mayo

Prep the hearts of palm:
Shred the hearts of palm using your fingers or two forks until it resembles crab meat.Mix the vegetables:
In a bowl, add the shredded hearts of palm, diced bell pepper, diced onion, and chopped capers.Season the mixture:
Add Old Bay, Tony’s, garlic powder, smoked paprika, and black pepper. Stir to combine.Add binder + breadcrumbs:
Pour in 3 tablespoons Just Egg and mix.
Add ⅓ cup breadcrumbs.
If the mixture feels too wet → add 1–2 more tablespoons breadcrumbs.
If it feels dry → add the optional 1 tablespoon of Just Egg.
Form patties:
Shape into 4 evenly sized patties.Cook:
Heat oil in a pan over medium heat.
Cook patties 3–4 minutes per side, until golden brown and crispy.Assemble the sandwich:
Layer bun + sauce + patty + lettuce + tomato. Serve warm.
✨ Notes
You can bake them at 400°F for 15–18 minutes, flipping halfway.
Add nori flakes for extra “seafood” flavor if you ever want a more oceanic taste.
